I love Mexican food and nothing beats freshly made Guacamole.  For the past several years, I have worked on perfecting my recipe and learned it is best to keep it simple.   To make the best guacamole, you need to wait until the avocados are ripe (but not too ripe!).

A common question that is asked, is how do I know if my avocado is ready to make Guacamole?

To determine if your avocados are ready,  they should yield to a firm but gentle pressure.  If they do not yield they still need to ripen and if they feel mushy, they are too ripe.

A great recipe for homemade guacamole, tableside guac!

Ingredients
  

  • 3 avocados ripe
  • 3 tomatoes ripe
  • 1 bunch cilantro chopped
  • 3 cloves garlic diced
  • 1 tablespoon onions diced
  • 1 1/2 tablespoons lime juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon cayenne pepper optional

Method
 

  1. Put tomatoes, cilantro, onions, and garlic in a bowl and smash with a pestle (if you do not have a pestle, try with a spoon, potato masher, or a meat tenderizing hammer).
  2. Add lime juice and salt. Mix and let sit for about 5 minutes.
  3. Scoop the avocado pulp and add to the bowl. Mash the avocado to desired consistency (do you want it chunky? Smooth?).
  4. Once complete let sit for 1 hour. Enjoy!

Frequently Asked Questions

How do I know when avocados are ripe for guacamole?

A ripe avocado gives slightly when you press gently near the stem end, and the little stem button flicks off to show green underneath. Rock-hard avocados need a couple days on the counter.

Why let guacamole sit before serving?

The hour of rest lets the lime, salt, garlic, cilantro and tomato flavors marry into the avocado, it genuinely tastes better than fresh-mashed. Press plastic wrap directly on the surface while it waits to keep it green.

How do I keep guacamole from turning brown?

The lime juice in the recipe helps a lot, and pressing plastic wrap directly against the surface keeps air off. Leftovers keep a day or so in the refrigerator, just stir off any darkened top layer.

I don't have a pestle, what else works?

A potato masher, the back of a big spoon or even a meat tenderizing hammer all get the job done. You want the tomatoes, onion, garlic and cilantro smashed into a rough paste before the avocado goes in.
